I can't wait for the BBQ season, its not always the greatest weather, but always some of the greatest food. We have invested in a gazebo for days when we don't wished to be stopped by rain and lets face it we can have all four seasons in a day in the UK. I am constantly on the look out for new BBQ ideas and accompaniments to spice up a burger or add a little extra to salad. Tracklements asked me to try their newest addition the Roasted Cherry Tomato Relish.
I was pretty surprised by how much I loved it, I prefer not so sweet tomatoes and expected my trial tasting to be a one off.
It has the sweet cherry tomato taste, but with the addition of chilli, coriander and lime its like a pickled salsa, these flavours balance the sweetness, so clever. I love coriander, it seems to be a Marmite type herb, you either love it or hate it and I am strongly in the love camp. The relish also has a lovely garlic and herb taste I am expecting this to be great with pan fried cod or grilled chicken too. I have been back to taste several more times since.
RELISH THE THOUGHT

NEW Roasted Cherry Tomato Relish is a delicious blend of slow-roasted English cherry tomatoes subtly spiced with chilli, coriander and thyme, combined with onion, cider vinegar, raw cane sugar and garlic. Roasted Cherry Tomato Relish is the perfect accompaniment for meaty barbecued fish or as a finishing touch to succulent beef burgers.For a quick, tasty snack, top a slice of crusty bread with crumbled goats cheese and add a generous dollop of Roasted Cherry Tomato Relish; or make some crostini to serve with drinks or as a starter with a mixed salad.
Makes 6 canapés or 4 starters:
220g Tracklements Roasted Cherry Tomato Relish
1 whole ciabatta loaf, approx 1.5cm thick slices
1 clove garlic, peeled and halved
Olive oil
200g Goat’s Cheese, crumbled
Black pepper
Method:
Grill both sides of the sliced ciabatta until golden brown.
Rub one side with the cut side of the garlic clove, then drizzle with olive oil.
Spread each slice with a generous spoonful of Roasted Cherry Tomato Relish, top with the crumbled goat’s cheese and finish with a twist of black pepper.
Return the crostini to the grill for a few more minutes until the cheese browns.
Serve immediately.
