Tefal Actifry Zesty Chilli Chicken

The Tefal Actifry has been so good both to us and for us.
Tefal kindly sent me one to review  a while ago and I wanted to add another recipe.

We now cook all chips, wedges and roast potatoes in one tablespoon of Extra Virgin Oil, (less than Tefal suggest for us and even healthier)

It makes chips less fattening than most plates of mashed potatoes.

If you remember I made a tasty Chicken Tikka Masala see the recipe just here I am still experimenting and trawling the internet for ideas and now I am used to what it does, I am finding it invaluable for easy meals without fuss if I am pushed for time.
This zesty chilli chicken is already a family favourite and we have made with turkey too, I also like to add herbs and green beans to give colour and flavour.
Its fast to prepare,  just chuck everything in a bowl, bar the potatoes and tomatoes, marinate if you have time.
Then its loading potatoes into the Actifry, next the meat and finally the tomatoes.

Then all the parts of the Actifry into the dishwasher and my job is done!

It does not seem possible to get flavours this good with such ease and the praise from the diners makes it really satisfying!

450g cubed chicken breast
1 red chilli, deseeded and chopped finely or 1 tsp chilli flakes
1 lemon, juice and zest
3 cloves of garlic. finely chopped
1 onion thinly sliced
Small waxy salad potatoes, halved length ways I use a 500g bag but add more or less as desired
4-6 large tomatoes cut into wedges
1 tablespoon  extra virgin olive oil (or any kind you like) or Frylight a few sprays

Mix together the chicken, chilli, garlic, onion, lemon juice and zest. (You can put these to marinate together as far in advance as you like to allow the flavours to develop, but if you don't have time it'll still be very tasty if used straight away).

Put the potatoes in the Actifry, drizzle with 1 tablespoon of the oil, cook for 15 minutes.

Add the chicken mixture and cook for a further 15 minutes.

Add the tomatoes and cook for a further 5 minutes.
That's it! Enjoy!!
