Warburtons Homemade Baked Beans



This is the final recipe for the Warburtons Lo Fat, Hi Taste 2 week eating plan. It has been a really good plan with lots of variety and most important for me still incorporating, bakery products.  For further info and recipes see the Warburtons Facebook page



This recipe makes  enough beans for  2 lunches - freeze half for another day. This is a great store cupboard meal.You can add any other  fresh vegetables ,instead of or as well as the peppers, like finely  chopped carrots and celery.
To freeze: Freeze in a freezer bag or freeze proof container, thaw at room temperature and then heat through in a saucepan.
Serves: 4

Takes 10 minutes to make and 30 minutes to cook

• 1 tbsp olive oil, peeled and finely  chopped
• 2 onions, peeled and finely chopped
• 1 red pepper, deseeded and finely  chopped
• 1 orange pepper, deseeded and finely chopped
• 1 red chilli, deseeded and chopped
• 1 garlic clove, chopped
• 2 x 400g  cans cannellini beans
• 2 x 400g cans soya beans
• 2 x 400g cans chopped  tomatoes

For the cheese toasts:
4 Warburtons pitta brown or white sandwich
80g gruyere cheese,  finely grated
1. Heat the oil and fry the onions, peppers, chilli and garlic  this will take about 10 minutes
2. Add the beans and tomatoes and simmer gently for 20 minutes
3. Preheat the grill to medium. Cut open the Warburtons
Pitta Breads to make 2 halves,cut each half into  half again  and then cut each half into 3 triangles (to make 6 triangles from each half Pitta). Put the triangles upside down on a baking tray and grill for a minute or 2, turn over and  sprinkle the cheese over the top and grill until the cheese has melted
4. Serve the cheese toasts with the baked beans
