Festive Feasting On Mexican Independence Day


I can never resist Mexican food, its my all time favourite and with it being Mexican Independence day next week I have another reason to cook a feast.
Discovery.

I've yet to try the Blueberry Tortillas but the other two are a cinch to make and very tasty.

Here are my  photos the wedges are simple to make and were loved by all of us. I cooked in a fan oven 180 degrees for 25 minutes.
I have always used this mix over steak or chicken but this was such a different taste for the wedges, I am keen to try on vegetables too now. Oh and if you are following slimming world the whole Fajita Seasoning Mix is only 3 1/2 syns. So for 4 its very healthy. Just add less oil when drizzling the potatoes.

I am becoming an old hand at the chicken fajitas.

Fajita Wedges

A fantastic way to take the popular potato and add flavour. For the extra adventurous, add shredded cheese, chives and soured cream.
Ingredients
  • 1 kg potatoes, skin-on, cut into thick wedges
  • 2 tbsp oil
  • 1 sachet Discovery Fajita Seasoning Mix, or to taste

Method
  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Coat potatoes in oil and Seasoning, to taste.
  3. Lay on a baking tray and cook in preheated oven for 30-40 minutes, or until well browned and cooked.
  4. Serve immediately.
 Chef's Tips
Top with cheese, chives and Soured Cream for a real treat!


Chicken Fajitas



Ingredients
  • 450g boneless chicken, cut into thin strips
  • 2 tbsp oil
  • 1 sachet Discovery Fajita Seasoning Mix
  • 1 onion sliced
  • 1 green pepper and 1 red pepper sliced
  • 8 Discovery Soft Flour Tortillas
To Serve:
  • Discovery Salsa
  • Discovery Soured Cream Topping
  • Discovery Guacamole
  • Discovery Sliced Jalapenos (Red or Green)

Method
  1. Coat chicken in oil and Fajita Seasoning Mix.
  2. Heat a heavy based frying pan until very hot and add chicken.
  3. Fry for about 3 minutes until well browned.
  4. Add onion and peppers and cook for a further 2 minutes or until the meat is cooked.
  5. Serve with warm Tortillas, Salsa, Soured Cream, Guacamole and Jalapeños, roll up and enjoy!



Blueberry Chips

Serves:4
Life may be too short to stuff a mushroom but trust us, it is not too short to make your own sweet tortilla chips. This is one of those desserts that is so painfully moreish, you won't stop dipping until every trace of the blueberry dip has disappeared. And then you'll make some more. Our advice is to buy twice as much as you think you need.
Ingredients
  • Discovery Soured Cream
  • 75g blueberry conserve
  • oil for shallow frying
  • 4 Discovery Plain Flour Tortillas, each cut into 8 triangles
  • 100g caster sugar

Method
  1. Mix together Soured Cream and blueberry conserve and chill.
  2. Heat oil and quickly fry tortillas until golden.
  3. Lift out of oil with a draining spoon and sprinkle with sugar whilst still hot.
  4. Leave to cool.
  5. Place blueberry dip in the middle of a large serving plate and surround with tortillas.
