Green Pie
This is one of the lovely recipes from the Little Dish Favourites Cookbook. It is as they say a good way to get children eating spinach. Take a look at my review here for more on the book and the two tomatoes rating itself.

This recipe is a great way to get kids to eat spinach, a highly nutritious food full of vitamins, zinc and iron. You can serve this on its own as a light meal or in a smaller portion as a side dish to chicken, fish or meat.
SIMPLICITY: Two tomatoes
SERVES: 8 children or a family
of 4 with leftovers
PREP TIME: 20–25 minutes
COOKING TIME: 50–60 minutes
INGREDIENTS
2 tablespoons olive oil
2 medium onions, sliced
1 teaspoon freshly ground black pepper
100g (3 1/2 oz) unsalted butter, melted
6 sheets filo pastry (about 270g/9 1/2 oz), defrosted
260g (10 oz) frozen chopped spinach, defrosted
6 large eggs, beaten
A large pinch of freshly grated nutmeg
100g (3 1/2 oz) freshly grated Parmesan cheese
40g (1 1/2 oz) fresh breadcrumbs (1 slice of brown bread)
225g (8 oz) feta, cut into small cubes
Here's what you do
• Preheat the oven to 190°C/375°F/Gas 5.
• Warm the olive oil in a saucepan over a medium heat, then sauté the onions until they are slightly browned, 10–15 minutes. Season with the pepper and allow to cool slightly.
• Meanwhile, butter a non-stick, ovenproof pie dish and line it with 6 stacked sheets of filo pastry, brushing each one with the melted butter and letting the edges hang over the sides of the dish.
• Squeeze the spinach to get rid of as much liquid as possible. In a bowl combine the spinach with the onions, eggs, nutmeg, Parmesan, breadcrumbs and feta. Put the mixture in the middle of the pastry and neatly fold the edges over the top to seal in the filling.
• Brush the top of the pie with melted butter and bake for 1 hour, until the top is golden and the filling is set. Allow to cool before serving.
