Philly Heroes Philly Mango Cheesecake Recipe

I wanted to share a Philly Heroes Recipe  after being inspired at the wonderful day out I had with one of the Philly Heroes Natalie Kelly and Ed Baines at an exclusive Philadelphia Cook along. Other jounalists, bloggers and I, were shown how to make Philly Leek Risotto and Philly Herb chicken and if you want a laugh look at Ed's Philly Meringue and mine side by side here, along with the creamy risotto and easy but very tasty chicken dish.

I came home with a goody bag full of recipes and ingredients to play with and fond memories of a perfuct lunch and a chance to cook with a celebrity chef and meet some lovely bloggers. 

My swirls are not as arty as Saadia's are they?

The recipe I made is the one by Saadia Usmani who won in Scotland. Its her Philly Mango Cheesecake recipe It makes a really luxurious cheesecake, my daughter who is not so keen on mango even liked it but I may try mandarin oranges as well, I think they would work well with the lime.

 

Ingredients
150g oaty biscuits, crushed
40g butter, melted
425g can mango slices in light syrup
Finely grated zest and juice of 1 lime
275g white chocolate, broken into pieces
300g Original Philadelphia
150ml double cream, lightly whipped



Instructions

Stir the biscuit crumbs into the melted butter until coated and press into the base of a 19-20 cm loose bottomed cake tin or spring form tin.

Drain the mango slices from their syrup and puree the fruit in a liquidiser or food processor with the lime zest and juice.

Melt the chocolate by placing it in a basin over gently simmering hot water.

Whisk the Philly until soft then whisk in the cream and chocolate. Fold about half the mango puree into the Philly cream and spoon over the prepared base.

Swirl the remaining mango puree on to the surface of the cheesecake to give an attractive pattern.

Chill for at least three hours before serving to allow the cheesecake to set.
Then grab a slice and enjoy!
