Look What We Found Herdwick Mutton, Lavender and Pearl Barley Risotto

I was very happy to receive the Look What we Founds latest offering Herdwick Mutton, Lavender and Pearl Barley Risotto .

I first tried the very tasty Gloucester Old Spot Pork Meatballs with Butter Beans at the BBC Good Food Show and brought home a selection of pouches to try. We have since eaten them a few times and particularly handy for Paige when she does her Duke of Edinburgh expeditions. Its a nutritious and tasty dish after miles of hiking. She will be using them again in June when she is away for a five day trip. Because you don't need to store them in a fridge they are perfect to pop in her rucksack.

I was not sure what the  lavender would be like in the new meal, I have tried biscuits with the herb in and liked them so I was up for trying it once. I could smell the lavender as soon as I opened the pouch but it was also a lovely meaty and cheese scent.
The flavour was gorgeous,  the meat tender and the lavender a really surprising taste complementing the mutton. As the meals can be kept for up to 12 months you think they may be a bit tasteless but they really are fresh and flavoursome.

Peter Edmondson is the fourth generation of his family to farm in Seathwaite, high in the northern fells of the Lake District. He supplies Look What We Found! with the wonderful free roaming Herdwick Mutton that they use in their mouthwatering new Herdwick Mutton, Lavender and& Pearl Barley Risotto.
Peter’s hefted Herdwicks spend their whole lives on the high land where there are no fences. This free ranging way of life and grazing on mountain heather, grass and plants gives the meat a quality all of its own. Farmers like Peter believe that Herdwick, with its unique flavours, grain and texture is comparable to Hereford Beef and Highland cows slow grown, slow maturing and sweeter.

Pleased to respond to the resurgence of interest in heritage meats like Herdwick Mutton, Look What We Found! have combined Peter’s tender mutton with traditional pearl barley and vegetables, adding a contemporary touch with rice and pecorino cheese and, perhaps most inspired of all, fragrant lavender.

Peter Edmondson’s Herdwick Mutton, Lavender and Pearl Barley Risotto has just 264 calories per 300g pack. For a wholesome, and relatively low calorie, meal in minutes that both satisfies the appetite and gives the tastebuds something to relish, serve Look What We Found! Herdwick Mutton, Lavender & Pearl Barley Risotto with a garnish of rocket leaves and some parmesan shavings.
